Freezer Recipe: Nacho Chicken Cassarole



This is a great Freezer Recipe. We made it with a different kind of Rotel and this time is was a bit Spicier then we like but it's still good!


Nacho Chicken Cassarole


4 C. cooked cubed chicken
1 lb. American cheese, cubed
2 (10oz) cans cream of chicken soup
1 (10oz) can diced tomatoes with green chilies, drained (Rotel)
1 medium onion, chopped
1/2 tsp. garlic powder
1/4 tsp. pepper
1 (14oz) pkg. tortilla chips, divided


In a large mixing bow, combine cooked chicken. American Cheese cubes, cream of chicken soup, tomatoes with green chilies, chopped onions, garlic powder and pepper. Toss together to combine. Crush tortilla chips and stir chips into mixture, reserving  1 cup for topping. Transfer mixture to a greased 9 X 13 baking dish. Top with reserved crushed chips. Cover and freeze.



To Prepare
Thaw in refrigerator or microwave. Preheat oven to 350 degrees. Cover and bake for 30 minutes. Remove cover and bake an additional 15 minutes.
